Vinification Profile - Direct to press, whole cluster, native yeast cold fermentation in small stainless steel tanks. Fermentation was lengthy and underwent a near full malolactic fermentation to balance out the naturally existing acidity. Filtered and bottled after a gentle racking. A slight spritz is present, light straw yellow color.

Aromatic Profile - Golden Delicious Apple, Meyer Lemon, Sweet Onion, Sage Blossoms

Vinification Profile - Direct to press, whole cluster,  native yeast cold fermentation. Malolactic fermentation was inhibited. Once fermentation completed, both lots were racked off and aged separately in neutral barrels for 3 months. Bottled unfiltered. deep orange gold color with freshness and density on the palate

Aromatic Profile - Peach Skin, Copper, Burnt Orange, Wild Strawberries, and White Tea.
